Upside Down Pumpkin Pie | Cobbler | Super Easy Super Tasty | The Best | Thanksgiving Game changer

  Hey y'all! Hope you are doing well. Today I am sharing how I make my easy upside down pumpkin pie. This is so easy and all you need is a bowl, a spoon and a pan.

To the bowl add 3 eggs and 1 cup of sugar.



Then add 1 can of pumpkin puree. Make sure this is puree and not pumpkin pie filling.


Next add 2/3 cup of heavy cream.


After that add 2 teaspoons of pumpkin spice. You can get this at the store or make your own homemade. I have a post with the recipe and labels for your jar here.


Then add 1 teaspoon of vanilla. I like to use Mexican vanilla I find locally but you can buy it on amazon as well.  


Last add 1 teaspoon of salt and mix everything together until it is well incorporated.


Pour the mixture into an 8-10 inch pan. It works perfect in a brownie pan for me. 


Now bake in the oven at 300 degrees for 25 minutes.


While that is baking make the crust topping. To start add 1/3 of a cup of brown sugar and 1/3 of a cup of regular cane sugar.



Then add 1 teaspoon of pumpkin spice.


Next add 1/2 a teaspoon of salt. 


Then 1 1/2 cups of all purpose flour and mix until well incorporated.



Last add 1 stick of butter and cut that into the flour mixture. You want it to be a nice and crumbly texture. After the pie finishes up top with the crust topping. 



Bake 15 minutes more at 300 degrees.


Since this is an upside down pie. It is best to use a spoon to serve it instead of a pie server. This is the best topped with whipped cream. I make stabilized whip cream. The recipe is here.

Upside Down Pumpkin Pie / Cobbler
Ingredients
FILLING:
• 3 eggs
• 1 cup sugar
• 15 oz can of pumpkin
• 2/3 cup heavy cream
• 2 tsp pumpkin spice
• 1 tsp vanilla
• 1 tsp salt
TOPPING:
• 1/3 cup brown sugar
• 1/3 cup sugar
• 1 stick softened butter
• 1 tsp pumpkin spice
• 1/2 tsp salt
• 1 1/2 cups all purpose flour
Mix all the filling ingredients in a large bowl and then pour
into 8 - 10" pan. Bake at 300 ° F for 25 minutes. While that is
baking mix all the topping ingredients in a bowl and mix
until it becomes a coarse crumble. Sprinkle all over the
top of the pumpkin filling. Bake for 15 more minutes (Your
baking time may vary depending on the appliance you
are using). Cool and serve with whipped cream. Enjoy!
