Hey y'all! Hope you are doing well. Today I am sharing our easy no bake refrigerator peanut butter pie. I have been making this for years and have made changes over the years to perfect it.
To start we need to make the crust. You can use store bought graham cracker crust or oreo but it is the best homemade. To a food processor add in 1/2 cup of cashews.
Then add 20 oreos.
As well as 2 tablespoons of brown sugar. Blend this up until it is coarse crumbles.
After that add in 6 tablespoons of melted butter. With the food processor on drizzle in the butter and mix until it is a sandy texture and starts to hold together.
Grease the pie pan and press the crust in the bottom. It is that simple to make a homemade cookie crust.
If you are using dream whip make it now add it to a bowl and set it aside. You can also use stabilized whipped cream or cool whip.
To the mixing bowl add an 8 oz block of cream cheese.
Then 1/2 cup of creamy peanut butter. I suggest the natural peanut butter. It makes a big difference.
As well as 1 cup of powdered sugar. Mix all of this until it is well incorporated.
Once it is well incorporated add in the dream whip, stabilized whipped cream or cool whip.
Mix this up. I use the whip attachment and it makes it so smooth.
Add the filling to the top of the crust.
Now is the fun part. Decorating! You can use chocolate chips, Reese's cups in varying sizes, Reese's pieces, chocolate drizzle or whatever you like. Let your imagination go wild. Store this in the fridge and serve cold.
