Hey y'all! Hope you are doing well. Today I am sharing how I make my chocolate pie. This pie is so silky smooth. It is my family's favorite.
I made a video showing how I make it. You can find that here.
To start make the crust. You can make a regular pie crust but we are making a graham cracker crust. It is super simple to make. If you don't want to make your own you can always buy store bought. Add 1 sleeve of graham crackers and 1/3 cup of sugar to the food processor.
Once that is mixed up while the food processor is on drizzle in 6 tablespoons of melted butter. Mix that until it starts to come together.
It is that simple to make graham cracker crust. Just be sure and press it into the pan so it holds together.
To make the filling add 2 cups of milk to a pan and cook on medium to medium high heat until it is very hot but not boiling.
While that is heating up mix up all the dry ingredients. To a bowl add 1 1/4 cups of sugar,
1/4 cup of cornstarch and 1/4 teaspoon of salt.
Also add in 9 tablespoons of cocoa. I suggest staying away from Hershey's and using a high quality dutch cocoa like Ghirardelli. This really makes a big difference.
Mix all the dry ingredients together making sure there are no lumps.
Now gradually stir in 1 cup of cold milk. Mix this together well.
Then add in four egg yolks that have
been beaten. Mix all this together until it is well incorporated.
While whisking add the chocolate mixture to the hot milk. Stir constantly so nothing burns. Turn up to medium high and cook until it is thick as pudding.
Once it is thick take the pan off of the heat. Add in six tablespoons of butter and 1 teaspoon of vanilla. Mix all of this well making sure all the butter is melted and mixed in.
Pour it over the crust and let it come to room temperature.
Put it in the fridge to cool. Serve cold.
