Pumpkin Spice Cheesecake Muffins With A Streusel Topping

        Hey y'all! Hope you are doing well. Today I am sharing how I make my pumpkin spice cheesecake muffins with a streusel topping. If you want you can make these without the cheesecake and streusel. The muffin recipe is great on its own.

To start set out the cream cheese. Mix all the dry ingredients together. 
•1 1/2 cups flour


• 3/4 cup sugar


• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/4 teaspoon salt


• 1 teaspoon pumpkin pie spice

Now add the wet ingredients to the dry and mix well.
• 1 egg


• 1/4 cup melted butter


• 1 1/2 cups pumpkin puree


• 1 teaspoon vanilla




Line and fill the muffin tins 3/4 of the way full.



In a separate bowl whip
• 8 oz cream cheese, softened.


Then add
• 1 tablespoon flour


• 2 tablespoons sugar


• 1/2 teaspoon vanilla
and mix well.


Add the cheese cake mixture to the center and press down.


Bake at 300 degrees F for 7 minutes.


While that is baking. Mix your streusel dry ingredients.
• 1 cup flour


• 1 cup brown sugar


• 1/4 teaspoon salt and mix together well.


Then add your wet ingredients
• 1/2 cup melted butter


• 1/2 teaspoon vanilla and mix everything together well.



Add the streusel topping and bake for 7 more minutes. (Your baking time may vary depending on the appliance you are using)



Check to make sure it is done by inserting a toothpick in the side going at an angle. If the toothpick comes out clean with no batter on it. It is done. Let cool and enjoy!

Pumpkin Muffins
• 1 1/2 flour
• 3/4 cup sugar
• 1 teaspoon baking powder
• 1 teaspoon baking soda

• 1 teaspoon pumpkin pie spice
• 1 1/2 cups pumpkin puree
• 1/4 cup melted butter
• 1 teaspoon vanilla
• 1 egg
Cheesecake Filling
• 8 oz cream cheese, softened
• 1/2 teaspoon vanilla
• 1 tablespoon flour
• 2 tablespoons sugar
Streusel Topping
• 1 cup flour
• 1 cup brown sugar
• 1/2 cup melted butter
• 1/4 teaspoon salt
• 1/2 teaspoon vanilla
Mix all the dry ingredients together. Now add the wet ingredients to the dry and mix
well. Line and fill the muffin tins 3/4 of the way full. In a separate bowl whip the
cream cheese then add the vanilla, flour, and sugar and mix well. Add the cream
cheese mixture to the center and press down. Bake at 300 degrees F for 7 minutes.
Add the Streusel topping and bake for 7 more minutes. Check to make sure it is
done. Let cool and enjoy!
