Hey y'all! Hope you are doing well. Today I am sharing how I make my white chocolate molten lava cakes. This is one of the easiest and quickest recipes. You don't need a mixer or whisk! I have made a lot of lava cakes and this is the closest to Chili's lava cake I have ever come and we like them even better!

To start I take my Texas muffin pan and line it with jumbo cupcake liners. You can use regular muffin pans or ramekins. When I used ramekins they continued to cook so much after pulling them out there was no lava in the lava cakes. They were also harder to get out.
Then I add butter and white chocolate chips to a microwave safe bowl.
Next heat them in the microwave in 30 second intervals. Be sure and heat it in intervals so the melted chips don't burn. After 30 seconds only the butter is melted.
After a total of 1 minute they are still not completely melted
After a total of 1 minute 30 seconds they are completely melted.
Now add in the powdered sugar and mix well.
Next add the eggs and mix well.
Now add the flour.
Then fill the muffin pan.
Now you bake them. In my convection oven I bake them at 350 degrees for 6 minutes turn bake 6 more minutes and then turn down to 300 degrees and bake for 2 minutes.(Your baking time may vary depending on the appliance you are using) If you are using a standard muffin pan I bake them at 350 degrees for 6 minutes turn and bake them for 5 more minutes. You want your centers to be soft and not jiggly.
Now they are all done and you let them cool for 2 minutes in the pan.
Then you carefully place them on a serving dish and take off the liner. Then dust them with powdered sugar.
Then I add raspberry sauce. You can add whatever topping you like.

White Chocolate Molten Lava Cake
Yields 6
Ingredients
• 4 oz white bakers chocolate or white chocolate chips
• 1/2 cup butter
• 1 cup powdered sugar
• 2 eggs
• 2 egg yolks
• 4-6 tablespoons of flour depending on the size of your eggs
Line Texas muffin pans with jumbo cupcake liners. You can use
regular sized muffin pans and liners but you have to adjust the
baking time accordingly. Microwave butter and chocolate in 30
second intervals until combined and smooth. Add powdered sugar
and mix well. Add eggs and yolks and beat until well combined.
Stir in flour till well combined. Pour batter evenly into muffin cups.
Bake at 350 degrees for 6 minutes then turn and bake 6 more
minutes. Your baking time may vary depending on the appliance
you are using. Bake 2 more minutes until center is soft but not
jiggly. Let cool 2 minutes. Put on dish and peel liner off. Dust with
powdered sugar. We also add raspberry sauce! Serve immediately.
Note: If you are using a regular muffin pan I bake them at 350
degrees for 6 minutes turn and bake them for 5 more minutes.
