Hey y'all! Hope you are doing well. Today I am sharing how I make my easy red lentil tofu. I have tried making tofu out of lots of beans and this is our favorite.

To start you need red lentil flour. I grind my own but you can buy it online. I will have a link at the bottom of this post.
Now boil your water.
Then in another pot add room temperature water and the red lentil flour. Mix them together and cook on medium high heat. Be sure and use a really good whisk! This gets really thick!
Next add the vegetable base to your boiling water and mix till it is dissolved.
Once it is dissolved add it to the pot with the bean flour mixture and mix.
Be sure and whisk the entire time. Once it has come to a rolling boil turn down to medium. Whisk for a few minutes until it is really thick.
Once it is really thick add it to your container
Spread it out as even as possible.
Let it come to room temperature then put it in the fridge for at least 4 hours. I like to let mine sit overnight. You can freeze it as well it doesn't change the taste or texture. Now use it as you would any tofu!

Red Lentil Tofu
Ingredients
• 1 cup room temperature water
• 1 cup bean flour
• 1 1/2 cup boiling water
• 3 teaspoons vegetable bullion
Boil 1 1/2 cup of water. Add 1 cup of room temperature water and bean
flour to another pan whisk together on medium heat. Once the water is
boiling add in the vegetable bullion and stir. Once it is dissolved pour into
the bean flour and water mixture Whisk for 8 minutes or so till it is very
thick. Pour into container and set overnight. Use like any other tofu.
