Hey y'all! Hope you are doing well. Today I am sharing how I make my easy pumpkin spice cake with a brown sugar icing.

To start set out the cream cheese. Mix the cake mix, eggs, water and pumpkin together. Mix it for 2 minutes. You can substitute the oil for pumpkin in a 1:1 ratio but we like to add more pumpkin. We do a 2:1 ratio. Adding the extra pumpkin makes the cake more moist and dense. It also makes it taste a lot more like homemade cake and not super fluffy like a box cake mix. It is almost like a pumpkin bread or a pound cake.
Grease the baking pan.
Add the batter to the pan.
Bake the cake at 300 degrees F for 20 minutes.(Your baking time may vary depending on the appliance you are using)
Check if it is done by inserting a knife or toothpick to the center. If it is clean or had cake crumbles on it it is done. If it has a gooey batter it is not done. Cook it for 5 more minutes and check. If it is still not done just repeat until it is done.
While the cake is cooling make the icing. To the mixing bowl add the cream cheese and mix it. Add the powdered sugar, brown sugar, milk and vanilla and mix really well.
Once the cake is completely cooled add the icing.

Easy Pumpkin Spice Cake
Yields 1 9x13 cake
Ingredients
Cake
• 1 spice cake mix
• 1/2 - 1 cup pumpkin puree
• 3 eggs
• 1 cup water
Icing
• 4 oz cream cheese
• 3/4 cup powdered sugar
• 1/2 cup brown sugar
• 1/2 teaspoon vanilla
• 1-2 tablespoons milk
Set out the cream cheese. Mix the cake mix, eggs, water and pumpkin
together and mix for 2 minutes. Grease the baking pan. Pour mix in the
pan. Bake the cake at 300 degrees for 20 minutes (Your baking time may
vary depending on the appliance you are using). Check if it is done by
inserting a knife or toothpick into the center if it is clean or if it has cake
crumbles on it it is done. If it has a gooey batter it is not done cook it for 5
more minutes and check. If it is still not done just repeat until it is done.
While the cake is cooling make the icing. To the mixer bowl add the cream
cheese and cream. Add the powdered sugar, brown sugar, vanilla and milk
and mix really well. Once the cake is completely cooled add the icing.
