Center of Cinnamon Roll Bites

    Hey y'all! Hope you are doing well. Today I am sharing how I make my center of the roll bites.  I have experimented a lot with this recipe and my family and I agree that this is the BEST! I have experimented with the flours, to the sugars and even the cinnamon. These are a family favorite!

To start I add sugar, yeast, water, flour, and salt to the mixing bowl. I start with the lowest amount of flour and add as needed. Here in the South the humidity varies and that really effects the amount of flour that I need. Then mix using a dough hook attachment. 



I like my dough to be slightly sticky but not so sticky I can't work with it.


Then I take the dough off of the dough hook and let it rest for 10 minutes.

While that is resting I mix the cinnamon sugar. I have made this with all regular sugar and all brown sugar but our favorite is half brown sugar and half white sugar. I have also tried to make this with Ceylon cinnamon and that give it almost a red hot candy flavor. If you like that you may prefer Ceylon cinnamon. Our favorite is just with the regular Cassia cinnamon you can get in the stores.


Then I melt the butter and gather my muffin tins. After the dough has rested for 10 minutes I put the dough on the counter top and pinch off a small amount (About the size of a quarter) and dip in melted butter then roll each piece in the cinnamon sugar mixture and place in muffin tin. Repeat until all muffin cups have 3 pieces of dough in them.




Cover the pan and let them rise until doubled in size or around 30-60 minutes
depending on how warm it is. While the dough is rising I make the icing. To the mixing bowl I add
softened cream cheese and whip 30 seconds. Then I add powdered sugar and mix 1 minute. Add
vanilla and enough milk/cream until the icing is the consistency you like!


After the dough has doubled in size. I bake mine in my small convection oven at 300 degrees for 5 minutes turn and bake 5 more minutes (Your baking time may vary depending on the appliance you are using)  or until a toothpick inserted comes out clean.




Let them cool five - ten minutes and serve with icing as a drizzle or a dip. Enjoy!

Yields 24 Servings

Dough
• 1 1/2 cup Warm Water
• 1 Tablespoon Yeast
• 3 Heaping Tablespoons Sugar
• 3+ Cups All Purpose Flour
• 1 Teaspoon Salt
Coating
• 3/4 Cup Melted Butter
Cinnamon Sugar
• 1 1/8 Cup brown sugar
• 1 1/8 Cup sugar
• 4 1/2 Tablespoon Cinnamon
Icing
• 4 oz Cream Cheese, softened
• 1 1/4 Cup of Powdered Sugar
• 1/2 Teaspoon Vanilla, or to taste
• 2 + Tablespoons of Milk or Cream
Take cream cheese out of refrigerator and let it soften on the counter. Add sugar, yeast, water,
flour and sugar to the mixing bowl. I start with 3 cups of flour and add more if needed. Mix
until the dough cleans the sides of the bowl Approx. 3-5 minutes. I like the dough to be slightly
